Ingredients


Grated Carrots: 1 kg
Heated Milk: 1 kg
Sugar: 1.5 cup (as much you like)
Green Cardamom: 8 to 10 pcs (grind its seeds)
Ghee: 3/4 cup
Khoya: 1 cup
Pistachios and Almonds: as much required (for garnishing)


Carrot or Gajar halwa recipe is a special and highly in-demand recipe of the winter season. People especially keep kilograms of carrots aside for making halwa. It is a very famous Pakistani traditional sweet. Sometimes, it is also found in parties as a sweet dish served after the meal. It's usual ingredients are grated carrots, milk, sugar, cardamom and khoya. Additional ingredients are used in different regions as per their traditions.

Method

Peel and grate carrots.
Heat ghee in karahi pan and add ground green cardamom seeds; add grated carrots when it starts giving aroma. Cook for 5 minutes.
Then pour heated milk and mix. Keep moving ladle.
Once all milk is evaporated, add sugar and mix well. Keep stirring ladle meanwhile; cook until sugar water is dried; then roast carrots.
Lastly, add one cup khoya, 2 tablespoon chopped almonds and pistachios and place for dam for 10 minutes. Then remove from the stove.
Delicious Carrot Halwa is ready. Transfer to the serving dish and serve hot garnished with almonds, pistachios and silver paper.
